1 · Recognize risk and manage the process
Start with the hazard. What could go wrong, how could it reach the guest, and what stops it? The manager’s job is to notice the problem while there is still time to do something about it.
Foodborne hazards can be biological, chemical or physical. Allergens also need deliberate controls. A CFPM identifies hazards before they become an illness: buy from approved sources, protect food from contamination, control time and temperature, and verify that employees follow the process.
Try this: A delivery looks fine, but nobody has checked the food temperature. Where can you interrupt the chain?
Pause acceptance and check the product against its receiving requirements. A reassuring appearance is not a measurement.
